Cereal in cake? Sound crazy? Trust us, it's not crazy. It actually makes complete sense. If you love Fruity Pebbles and you love cake than how could you go wrong! This moist, fruity cake puts a new spin on the average "funfetti" cake.
Cake*
2 cups flour
1 1/2 cups sugar
3 1/2 tsp baking powder
1 tsp salt
1/2 cup shortening
1 cup milk
1 tsp vanilla
4 egg whites
2 cups Fruity Pebbles
Mix vanilla, milk, shortening, salt, baking powder, sugar, and flour for 2 minutes. Add egg whites and beat 3-5 minutes. Gently fold in Fruity Pebbles. Pour in cake pan and bake at 350 degrees for 20-25 or until golden brown on top.
Frosting
1 bag powdered sugar (2lb bag)
1 cup butter
1/4 cup flour
2 tsp vanilla
1/2 tsp almond flavoring
1/2 cup evaporated milk
Mix ingredients until fluffy.
Frost cooled cake and sprinkle with more Fruity Pebbles.
*We made one and a half of this recipe and it was perfect for a large sheet cake pan!

It's been a while.... we know, and we apologize. We have been so busy with life lately but we have not forgotten about this blog! So let's just dive right into our next recipe. This. Is. So. Good. It's kind of the perfect dessert. It's the full package. Its sweet. It's creamy. It's buttery. It's crispy. It's fruity. It's yummy and a great spring dessert! There are a few steps to this recipe but each step is really easy to make and is well worth it. And look how pretty it is!
Crust
1/2 cup softened butter
3/4 cup white sugar
1 egg
1 1/4 cups flour
1 tsp cream of tartar
1/4 tsp salt
Cream butter and sugar together. Mix in egg. Combine dry ingredients and add to creamed mixture. Mix until blended. Press on to ungreased pizza pan and bake at 350 degrees for 8 minutes.
While crust is baking make the pineapple glaze.
Pineapple Glaze
1/2 cup sugar
3 tbsp flour
1 slightly beaten egg
2 tbsp butter
1 cup pineapple juice
Combine all ingredients in sauce pan and cook on low heat stirring constantly. Once mixture warms up slowly turn the heat up between medium low and medium. Keep stirring until mixture thickens.
While the pineapple glaze and crust are cooling make the cream cheese whip topping.
Cream Cheese Whip Topping
1 pint whipping cream
2/3 cup sugar
2 tbsp vanilla
16 oz cream cheese
Put ingredients in mixer and beat together until combined and fluffy.
Once the pineapple glaze has cooled fold the mixture into the cream cheese whip topping. Spread the mixture on top of the crust (you are going to want a lot of this stuff, it's good!) Top pizza with your favorite fruit. I did strawberries, bananas, raspberries, and blackberries.
*I was able to make 2 crusts and one batch of topping was plenty for both. And plenty to eat by the spoonful :)

Our first recipe post! We are so excited about this one cause these cupcakes turned out so good and were easy to make! We are both OBSESSED with Nutella and thought the pairing of it and banana would be incredible. Add a little cream cheese and who wouldn't want a banana cupcake with Nutella cream cheese frosting?!
Banana Cake -makes 18 cupcakes
2 1/4 cups flour
1 2/3 cups sugar
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
2/3 cup shortening
2/3 cup buttermilk
3 eggs
1 1/4 cups mashed bananas
3/4 cups chopped hazelnuts (optional)
slices of fresh bananas or banana chips (garnish)
Cream together shortening, buttermilk, eggs, and mashed bananas in mixer. Slowly add in dry ingredients and mix 2-3 minutes. Fold in hazelnuts. Fill cupcake liners 3/4 full. Bake @ 350 degrees for 18 minutes.
Nutella Cream Cheese Frosting*
1/2 cups butter
16 oz cream cheese
1 1/2 cups Nutella
Powdered sugar
Beat butter, cream cheese, and Nutella until fluffy. Slowly add in powdered sugar (we just added a little bit at a time until we got the flavor and consistency we wanted) Beat frosting so it's light and fluffy.
Frost cooled cupcakes with frosting and garnish with the fresh banana slices or banana chips and enjoy! :)
*This makes a lot of frosting so feel free to double the banana cake recipe or half the frosting recipe. Or freeze the left over frosting to have on hand like we did!
